Nestled in the heart of the Sabina Valley, Castelnuovo di farfa is the epicentre of ancient Olive groves where every Autumn, a labor of love and sweat is dedicated to the land and beautiful oil comes to earth. We have 160 Olive trees, all surrounded by fruit trees, each tree ranges from 20 to 1000 years per tree. Acquired in 2023 and slowly have been rescuing, curate and re-fertilize naturally. each tree like our new family members, and now they're fully producing one of the purest Extra virgin olive oil Bio, as we don't use any kind of pesticides. We had it tested in the regional lab for chemical analysis test, and resulted in acidity at 0.2%, to make it extremely low in acidity we harvest the olives earlier than usual, where the acid oleic, it hasn't increased yet, so the oil will come less in production but loaded in polyphenols which are antibiotic and antibacterial, with herbal crisp peppery notes, being healthy in the first place it is a privilege to add it to any of your daily meals, either a slice of bread, a fresh burrata salad, a plate of pasta, or to your family daily teaspoon to help the digestive system at full potentials.
Valerio N.1 Evoo is a premium 100% Bio, hand harvested, extra virgin olive oil, officially classified as grade N.1 by the regional chamber of commerce tasting panel as the purest form of Evoo, A limited production that range from 250 to 1000 bottle produced worldwide for every harvest, and the remaining gets shared only in Michelin and fine dining establishments.

Our Craft is an obsession for perfection and dedication.
Our olive groves hold two tipology of Olives, "CARBONCELLA" and "LECCINO". Both tipology with disctinctive flavors notes.
After olives are harvested, we separate any big branches larger than 3cm to burn them and obtain the ashes to then spread it on each tree, to add the minerals and adjust soil PH.
Then we take the smaller branches lay them all around the land, then we walk with a tank shredder tractor where we powder the olive wood all around the area, which with the time it will process and with the upcoming rains it will continue to give the soil for the winter: Magnesium, Potassium and Nitrogen, essential for the olive growth during resting periods.
While we shred the small branches, simultaneously we’re also shredding an entire Borage field which is super high in proteins, a variety of grass, variety of plants, orange skins, cherries and figs from the surroundings trees, adding a whole spectrum of vitamins, proteins, antioxidants, omega, which it boosts the tree’s health to another level.
We then put the trees on rest mode, where we clean and leave the land like a Zen garden and prepare for the next spring.
In February we buy natural organic copper powder mix it with water and sprayed all around to add an additional mineral, essential for the tree to fight bacteria’s, and slow down any fungi attacking from outside like the common bacteria called “Pseudomonas savastanoi“ .
So just like human beings each tree have sicknesses, wounds that the tree patches and heal itself making it extremely unique.
